Heat the oil in a pot. Season the piece of lamb with salt and
pepper and brown it in the pot on all sides. Add the chopped onion,
saute, add the 3 cups of warm water and allow to simmer until the meat
is almost tender.
Lightly saute the courgettes in a frying pan after having seasoned
them first. Place them alongside the meat in the pot, add the finelly
chopped parsley and allow the meal to simmer until the courgettes are
done. If we deem it necessary, we can add more warm water.
Beat the eggs in a bowl. Add in the lemon juice and corn flour, and
continue beating till the corn flour is dissolved. If necessary,

1kg lamb or goat meat, cut into medium size pieces
2-3 spring onions, finely chopped
1 bunch dill, finely chopped
1/2 cup olive oil
2-3 butter lettuce
2 eggs
2 lemons

Brown the meat in the heated olive oil, and then add the spring onions, dill, salt, pepper, and 2 cups of water.
When the meat is almost tender, add the butter lettuce, which you have roughly chopped. Let cook for approximately 15 minutes.
Take off the heat, and proceed to prepare the egg-lemon sauce to thicken the juices.
Whisk the egg whites well. Add the yolks one by one, beating them in well. Then add the lemon juice and continue beating.
While beating, add spoonfuls of the hot juices from the pot to the
egg sauce, to temper it to a higher temperature. Then pour the egg
sauce over the contents of the pot, and shake the pot around a bit, to
ensure all is well distributed.
In a pressure cooker, saute the chopped onions and brown the veal
cubes in the heated olive oil. Add 250ml water and cook for
approximately 15 minutes, depending on the size of the meat cubes.
Empty the contents of the pressure cooker into an ovenproof dish,
preferrably a lidded one. Add the stock cubes, tomatoes, sugar, garlic,
salt and pepper, and the orzo. You can use more or less orzo, depending
on the size of your dish. Add the wine and at least 250ml water.
Cover. If your dish does not have a lid, cover well with alluminium foil.
Bake in a preheated oven, at 170 degrees C, for 1 to 2 hours. After
1,5 hours, remove the lid, add the crumbled feta cheese, stirring it

600gr pork (front leg/shoulder) cut into medium sized cubes
4 ripened medium size tomatoes
4 medium size green peppers
350gr greek kefalotyri or pecorino romano cheese in cubes
1 glass of wine
2 chopped garlic cloves
salt, pepper, oregano
1 glass of wine olive oil

Wash the meat and dry it with paper towel. In a big bowl place the
meat and rub it with salt, pepper, oregano and the chopped garlic.
Wash the tomatoes and peppers and cut them in thin rounds (as you do for a pizza).
Place half the meat quantity in a casserole dish and add in between the meat pieces, half the pecorino cubes.
Lay on top of the meat, half of the cut peppers and then half of the
tomato rounds. On top of the tomatoes, add the remaining meat, chease,
peppers and tomatoes in this order (as we did above).

Add the meat, and brown well for 4-5 minutes over high temperature.
Add the cloves, pimento, bay leaves, paprika, pepper and lastly, the
salt. Lower the heat, and add the rest of the oil, the tomato, and
the water. Let simmer gently for 1 hour.
In the meantime, boil the pasta according to packet instructions.
Serve the pasta together with the meat sauce and sprinkle generously grated cheese over it.

3 μεγάλες κούπες βρασμένο ρύζι. (Εγώ
χρησιμοποιώ ρύζι γλασέ πολύ καλά βρασμένο-στην Ιταλία συνήθως
χρησιμοποιούν arborio-με έναν κύβο ζωμό κότας)
Κιμά φτιαγμένο όπως για τα μακαρόνια χωρίς
όμως καθόλου υγρά.. Όσο το δυνατόν πιό στεγνό (Μιά καλή λύση είναι να
χρησιμοποιήσουμε τον κιμά που περίσσεψε από τα μακαρόνια αφού τον
στραγγίξουμε καλά από τα υγρά του).
6-7 τετράγωνα κομματάκια κίτρινου τυριού που λιώνει (ταιριάζει θαυμάσια η δική μας κεφαλογραβιέρα)
